The mandarin behind authentic chenpi — Citrus reticulata 'Chachi' — is a small heritage cultivar found only in Xinhui's Pearl River Delta soil. The subtropical humidity, the mineral profile, the cool winter — none of it transplants. Peels grown elsewhere don't develop the same chemistry, no matter how long they age.
We've never planted a tree outside Xinhui. We never will.

In autumn, our family and growers hand-pick the fruit by basket. The mandarin is peeled in three sections following the traditional Xinhui pattern, then laid on woven bamboo trays under open sun.
After initial drying, peels move to our pure-dry warehouses, where they're inspected, turned, and re-sorted year after year. A 10-year peel has been touched dozens of times since it left the orchard. This is craft work at production scale.
