Harvesting
Two distinct harvests drive two distinct products. Xiaoqinggan is harvested every July when the fruit is young, green, and rich in fresh citrus aroma. Chenpi citrus is harvested around the Winter Solstice when the fruit reaches full maturity, deeper sweetness, and peak natural oil content. All fruit is picked directly from our orchards in Xinhui's core growing regions.

Fruit Selection
Every batch undergoes careful manual inspection. Only fruits meeting strict standards for size, appearance, maturity, and peel integrity proceed to production — ensuring consistency across every batch and every season.

Cleaning
Selected fruits are thoroughly cleaned to remove surface impurities while fully preserving the integrity of the citrus peel. Food safety and hygiene standards are maintained throughout.

Peeling
Citrus fruits are manually opened using traditional Xinhui peeling techniques developed over generations. This step requires genuine skill and precision — preserving the peel structure that is essential for optimal drying and aging.

Turning & Shaping
After peeling, each peel is naturally shaped by hand into its traditional form before drying begins. This ensures even drying across the surface and supports long-term natural aging.

Natural Sun-Drying
All chenpi and xiaoqinggan are naturally sun-dried under open sunlight — never machine dried, never artificially heated. Natural sun-drying preserves the citrus's natural oils, layered aroma, aging potential, and authentic flavor. Drying conditions are monitored carefully according to seasonal climate and daily weather.

Aging & Storage
After drying, products enter our dedicated aging warehouse system. Our facilities maintain carefully controlled ventilation and humidity to support stable, long-term natural aging. Over months and years, the aroma and character of the chenpi continue to evolve — developing the depth and complexity that defines premium Xinhui chenpi.
